Pumpkin soup is one of those recipes that rewards very little effort with a great deal of flavor. The base is simple: sweated onion and garlic, cubed pumpkin, broth, and a small handful of spices. Everything simmers together until the pumpkin is completely tender, then gets blended until smooth and finished with a little cream. The result is a soup that is velvety, naturally sweet, and warming in a way that makes it feel like a lot more work than it was.

The pumpkin variety matters more than most people expect. Butternut squash is the most consistent choice – it is widely available year-round, reliably sweet, and blends to an exceptionally smooth texture. Hokkaido (red kuri) pumpkin is denser, slightly nuttier, and the skin is thin enough to leave on before blending. Standard carving pumpkins, by contrast, are bred for size rather than flavor and tend to produce a watery, flat-tasting soup. If you are starting with a fresh pumpkin, taste a piece raw before committing – if it lacks sweetness, a pinch of brown sugar added to the pot corrects it without making the soup taste like dessert.

The spice combination here is smoked paprika and nutmeg. Smoked paprika adds a subtle, earthy warmth and gives the soup a slightly deeper color. Nutmeg is used in a small amount – just enough to add a faint background note that rounds out the pumpkin’s natural sweetness without being detectable as a specific flavor. Both are added early so they bloom in the butter before the broth goes in.

The garnish of fresh parsley and a dusting of paprika is not just decorative. The parsley brings a clean, herbal contrast to the richness of the soup, and the extra paprika adds a pop of color against the golden surface. A drizzle of cream or a small spoonful of crème fraiche adds another layer of richness if you want it, but is genuinely optional.

Blending while the soup is very hot produces the smoothest result. An immersion blender works well for a rustic finish; a stand blender gives you the silkiest texture. If you enjoy blended vegetable soups with this kind of depth, our Creamy Mushroom Soup is worth making on the same week – and for something heartier on cooler evenings, our Classic Italian Minestrone is a reliable choice.

Ingredients for Creamy Pumpkin Soup

  • 2 tablespoons unsalted butter or olive oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1.4 kg (about 3 lbs) pumpkin or butternut squash, peeled, deseeded, and cut into 3cm cubes
  • 1 teaspoon smoked paprika, plus extra for garnish
  • 1/4 teaspoon ground nutmeg
  • 1.2 liters (5 cups) vegetable or chicken broth
  • 150ml (2/3 cup) heavy cream, plus extra for drizzling
  • Salt and white pepper, to taste
  • For garnish:
  • Fresh flat-leaf parsley
  • Smoked paprika
  • A drizzle of cream (optional)

How to Make Creamy Pumpkin Soup

  1. 1

Melt the butter in a large heavy pot over medium heat (about 160°C / 320°F). Add the diced onion and a pinch of salt. Cook, stirring occasionally, for 7-8 minutes until the onion is completely soft and translucent.

  2. 2

Add the garlic and cook for 1 minute, stirring, until fragrant.

  3. 3

Add the smoked paprika and nutmeg and stir for 30 seconds to bloom the spices in the butter.

  4. 4

Add the cubed pumpkin and stir to coat in the spiced butter. Cook for 2 minutes.

  5. 5

Pour in the broth and bring to a boil (100°C / 212°F), then reduce to a steady simmer at around 90°C (195°F). Cook uncovered for 20-25 minutes, until the pumpkin is completely tender and collapses easily when pressed with a spoon.

  6. 6

Remove from heat. Use an immersion blender to blend the soup directly in the pot until completely smooth, or blend in batches in a stand blender (leave the lid slightly ajar and cover with a towel to allow steam to escape).

  7. 7

Return the pot to low heat. Stir in the heavy cream and warm gently for 3-4 minutes - do not boil. Taste and adjust seasoning with salt and white pepper.

  8. 8

Ladle into bowls. Garnish each serving with a sprig of fresh parsley, a pinch of smoked paprika, and an optional drizzle of cream. Serve immediately with crusty bread.

Tips & FAQ

Can I use canned pumpkin instead of fresh?
Yes. Use 800g (about two standard cans) of plain canned pumpkin puree - not pumpkin pie filling, which contains added sugar and spices. Skip the simmering step and add the puree directly after the spices, then add the broth and stir until smooth before heating through. The result is slightly less complex in flavor than fresh pumpkin but perfectly good and significantly faster to make.
What type of pumpkin works best?
Butternut squash is the most reliable choice - sweet, consistent, and available year-round. Hokkaido (red kuri) pumpkin is also excellent and has a richer, nuttier flavor. Avoid large decorative carving pumpkins, which tend to be watery and bland. If you are using fresh pumpkin from a market and are not sure of the variety, taste a small piece raw - it should smell faintly sweet and the flesh should be dense and bright orange.
How do I make this vegan?
Replace the butter with olive oil and the heavy cream with full-fat coconut milk (from a can, well stirred). Coconut milk adds a slight tropical note that works well with the smoked paprika. Use vegetable broth. Everything else in the recipe is already plant-based. The soup is naturally dairy-free with these two swaps and does not taste like a compromise.
Why is my soup not smooth enough?
Two common causes: the pumpkin was not cooked long enough before blending (it should be completely tender, falling apart when pressed), or the blender is not powerful enough to break down the fibrous parts of the squash. For the smoothest result, use a high-speed stand blender and blend in smaller batches for at least 60 seconds per batch. Passing the blended soup through a fine mesh sieve gives a restaurant-quality texture if smoothness is a priority.
Can I freeze pumpkin soup?
Yes, very well. Freeze the blended base without the cream in sealed containers for up to 3 months. Thaw overnight in the refrigerator, reheat gently on the stovetop over medium-low heat (about 70-80°C / 160-175°F), and stir in the cream fresh when serving. Adding cream before freezing can cause it to separate when reheated, so it is always better to add it at the end.
