Broccoli cheddar soup is one of those recipes where the quality of your cheese determines the quality of your soup, more directly than almost any other ingredient. Buy a block of sharp or extra-sharp cheddar and grate it yourself. Pre-shredded cheddar is coated in starch and cellulose to prevent clumping in the bag, and that coating prevents it from melting into a smooth, glossy sauce – instead, you get a slightly grainy, oily result. Thirty seconds with a box grater makes a real difference to the final texture.

The base is a simple roux: butter and flour cooked together until the raw flour smell disappears, then loosened with broth, milk, and cream. This is what gives the soup its characteristic thick, coating quality. The roux needs to cook for about two minutes – long enough to lose that raw, pasty taste, but not so long that it darkens. You want a very pale roux here because a darker one has less thickening power and adds a toasted flavor that competes with the cheese.

The carrots are not just filler. They add a gentle natural sweetness that rounds out the sharpness of the cheddar and keeps the soup from tasting one-dimensional. The broccoli should be cut into small, even florets and added toward the end – ten to twelve minutes in the simmering soup is enough for the pieces to become tender while holding their shape and bright color. Overcooked broccoli turns dull and soft; in a creamy soup that already has a gentle texture, you want the florets to provide contrast.

The cheese goes in at the very end, off the heat. This is the step that most often goes wrong: adding cold grated cheese to a soup that is actively boiling causes the proteins to seize, resulting in a stringy or grainy texture rather than a smooth one. Remove the pot from the heat, let it rest for a minute, then add the cheese in two or three additions, stirring well between each. It will melt in slowly and evenly.

Dry mustard powder is not something you taste in the finished soup, but you notice its absence. It sharpens the cheddar flavor and adds a faint warmth that lifts the whole bowl. A small pinch of cayenne does the same. Neither is optional.

If you prefer a thicker, more uniform texture, use an immersion blender to blend about one-third of the soup before adding the cheese. This breaks down some of the broccoli and carrot into the base, giving you a creamier result with pieces still floating through.

If you love a thick, comforting soup, French Onion Soup is worth the patience it asks for – or try Chicken Noodle Soup if you want something lighter that still hits the same restorative note.

Ingredients for Creamy Broccoli Cheddar Soup

  • For the soup:
  • 3 tbsp unsalted butter
  • 1 medium yellow onion, finely diced
  • 2 medium carrots, peeled and cut into small dice
  • 3 garlic cloves, minced
  • 1/3 cup (45 g) all-purpose flour
  • 750 ml (3 cups) good-quality chicken broth or vegetable broth
  • 500 ml (2 cups) whole milk
  • 240 ml (1 cup) heavy cream
  • 600 g (about 1 large head) broccoli, cut into small florets, stems peeled and diced
  • 1 tsp dry mustard powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp fine salt, plus more to taste
  • Black pepper, to taste
  • 300 g (3 cups loosely packed) sharp cheddar, freshly grated from a block

How to Make Creamy Broccoli Cheddar Soup

  1. 1

Melt the butter in a large pot or Dutch oven over medium heat. Add the diced onion and carrot and cook, stirring occasionally, for 6-8 minutes until the onion is soft and translucent and the carrot has begun to soften.

  2. 2

Add the minced garlic and cook for 1 minute, stirring constantly so it does not burn.

  3. 3

Sprinkle the flour over the vegetables and stir well to coat everything evenly. Cook the roux for 2 minutes, stirring continuously, until the raw flour smell is gone - the mixture will look thick and paste-like. This step is important: undercooked roux makes the soup taste starchy.

  4. 4

Add the chicken broth gradually, pouring in about a quarter at a time and stirring vigorously after each addition to prevent lumps. Once all the broth is incorporated and the mixture is smooth, pour in the milk and heavy cream and stir to combine.

  5. 5

Add the dry mustard powder, cayenne, salt, and a generous amount of black pepper. Bring to a gentle simmer over medium heat, stirring frequently.

  6. 6

Add the broccoli florets and diced stems. Simmer for 10-12 minutes until the broccoli is tender but still bright green and the soup has thickened noticeably. Stir often and do not let it come to a rolling boil.

  7. 7

If you prefer a creamier texture, use an immersion blender to blend about one-third of the soup directly in the pot, then stir to recombine. Skip this step if you prefer a chunkier soup.

  8. 8

Remove the pot from the heat completely and let it rest for 1 minute. Add the grated cheddar in three additions, stirring well and letting each addition melt fully before adding the next. The soup will turn glossy and thick. Do not return the pot to high heat after adding the cheese.

  9. 9

Taste and adjust salt and black pepper. Ladle into bowls and serve immediately. If reheating leftovers, warm gently over low heat with a splash of broth or milk, stirring often - do not boil.

Tips & FAQ

Can I use frozen broccoli?
Yes - frozen broccoli works well here. No need to thaw it first; add it directly to the soup and reduce the cooking time slightly since it is already partially cooked.
Why is my soup grainy?
Cheese added to a boiling soup will seize and turn grainy. Remove the pot from the heat before adding the cheese and stir it in gradually rather than all at once.
Can I make this soup thicker or thinner?
For thicker, blend more of it. For thinner, add more stock after blending. A splash of cream at the end adjusts both texture and richness at the same time.
What type of cheddar works best?
Sharp or extra-sharp cheddar gives the most flavour. Pre-shredded cheese from a bag does not melt as smoothly because of the anti-caking coating - grating a block yourself gives a much better result.
Can I freeze broccoli cheddar soup?
Cream-based soups with cheese do not freeze well - the texture can split and become grainy. It keeps in the fridge for 4 days, so making a big batch for the week is the better approach.
