Hummingbird Cake first appeared in print in Southern Living magazine in 1978, submitted by a reader from Greensboro, North Carolina, and it became one of the most requested recipes the magazine had ever published. That record held for decades. The combination it described – very ripe banana, crushed pineapple, toasted pecans, and cinnamon in an oil-based batter, with cream cheese frosting – turned out to be one of those rare things that is genuinely greater than the sum of its parts.

The cake gets its moisture from two sources that work together rather than competing: banana and crushed pineapple, both of which contribute liquid as well as sugar and flavour. The pineapple is the less obvious ingredient, but it is essential – it adds a tropical brightness and acidity that keeps the banana from being the dominant note, and the fine texture of crushed pineapple disappears into the crumb in a way that larger pieces would not. Use crushed pineapple from a can and drain it thoroughly before adding it to the batter; undrained pineapple makes the batter too wet and the layers can collapse under the weight of the frosting.

The bananas should be very ripe – black-spotted and soft. Underripe bananas have less sugar and far less flavour, and the difference in the finished cake is immediately noticeable. If your bananas are not quite there, ripen them in a 150C (300F) oven for 15 to 20 minutes until the skins turn black and the flesh is completely soft.

Oil rather than butter keeps the crumb moist for several days without refrigeration, which matters for a cake this substantial. The spices – cinnamon primarily, with a little nutmeg – add warmth without overwhelming the fruit, and the pecans folded into the batter add a toasted, slightly bitter note that balances the sweetness throughout every slice.

Cream cheese frosting is the only appropriate finish for this cake. Its tang cuts through the sweetness of the layers in exactly the right way, and the combination with banana-pineapple sponge and toasted pecans is one of the great flavour pairings in American baking. Press the remaining chopped pecans firmly into the sides of the finished cake – it both looks impressive and adds crunch to every slice.

The most common mistake is using ripe but not very ripe bananas. The second most common is skipping the pineapple draining step. Both result in a cake that is wetter and less flavourful than it should be. Check both before you begin, and everything else in this recipe is completely straightforward.

  • Hummingbird cake layers:
  • 360g (3 cups) all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 400g (2 cups) granulated sugar
  • 3 large eggs
  • 240ml (1 cup) neutral oil (sunflower or vegetable)
  • 2 teaspoons vanilla extract
  • 3 very ripe medium bananas (about 300g / 1 1/4 cups mashed)
  • 225g (8 oz) crushed pineapple, very well drained
  • 150g (1 1/4 cups) pecans, roughly chopped and toasted
  • Cream cheese frosting:
  • 500g (18 oz) full-fat cream cheese, at room temperature
  • 150g (2/3 cup) unsalted butter, at room temperature
  • 400g (3 1/2 cups) powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • Pinch of fine salt
  • To finish:
  • 200g (1 3/4 cups) pecans, finely chopped and toasted
  • 50g (1/2 cup) sweetened shredded coconut

How to Make Classic Hummingbird Cake

    Preheat the oven to 175C (350F). Grease three 20cm (8-inch) round cake tins and line the bases with parchment paper.

    In a large bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt until evenly combined.

    In a separate large bowl, whisk together the sugar, eggs, oil, and vanilla until smooth and well combined.

    Add the mashed banana and the drained crushed pineapple to the wet ingredients and stir until incorporated.

    Add the dry ingredients to the wet ingredients and fold with a spatula until just combined - do not overmix.

    Fold in the chopped toasted pecans until evenly distributed throughout the batter.

    Divide the batter evenly between the three prepared tins and smooth the tops.

    Bake for 25 to 30 minutes, until a toothpick inserted in the center comes out clean and the layers spring back gently when pressed.

    Leave to cool in the tins for 10 minutes, then turn out onto wire racks and cool completely before frosting.

    Make the frosting: beat the cream cheese and butter together on medium speed for 2 to 3 minutes until smooth and fluffy. Add the sifted powdered sugar, vanilla, and salt and beat on low until incorporated, then increase to medium and beat for 1 to 2 minutes until smooth and creamy.

    Place the first cake layer on a serving plate or cake board. Spread a generous, even layer of frosting over the top. Place the second layer on top and repeat. Add the third layer.

    Spread the remaining frosting evenly over the top and sides of the cake.

    Gently press the finely chopped toasted pecans into the sides of the frosted cake, covering them completely. Scatter the shredded coconut and any remaining pecans over the top.
