There is a specific memory attached to Cinnabon rolls for a lot of people – the smell hits first, warm and sweet and slightly caramelized, drifting from the shop before you can see it. The rolls themselves are large, soft, and unapologetically indulgent: a thick enriched dough, a heavy hand with the cinnamon sugar filling, and a cream cheese frosting that goes on while the rolls are still hot so it melts slightly into the spirals. This recipe is a faithful homemade version built from scratch.

The dough is enriched with milk, butter, eggs, and a small amount of sugar, which gives the finished rolls their characteristic soft, pillowy texture and slightly sweet flavour. Warm the milk to around 40C – warm enough to activate the yeast but not so hot it kills it. If it feels uncomfortably warm on your wrist, it is too hot. The dough needs to be kneaded until smooth and slightly tacky, then given enough time to rise properly. Under-risen dough produces dense, bread-like rolls rather than the light, layered result you are after.

The filling is softened butter, dark brown sugar, and a generous amount of cinnamon. Dark brown sugar has more molasses than light brown, which gives a deeper, more caramelized flavour – it is worth using here rather than substituting. Spread the filling all the way to the edges of the dough, because any unfilled strip becomes a dry gap in the finished roll. When you roll the dough up, keep it tight but not strained. A loose roll means the filling falls out during cutting; an over-tight one compresses the layers and makes them chewy instead of soft.

The cream cheese frosting should go onto the rolls while they are still hot – fresh from the oven. As it melts into the top it soaks down between the layers slightly, which is exactly what you want. Cold frosting sits on top as a separate layer; hot frosting becomes part of the roll.

A swap worth knowing: to make these overnight, do the second rise in the fridge. Shape the rolls, cover the pan tightly, and refrigerate overnight. The next morning, take them out and let them sit at room temperature for 45 to 60 minutes before baking. The slow, cold rise develops more flavour in the dough.

The most common mistake is cutting the rolls unevenly, which means some bake faster than others and the smaller ones dry out while the larger ones are still finishing. Use a sharp serrated knife or a length of unflavoured dental floss slid under the log and crossed over the top for the cleanest, most even cuts.

If cinnamon rolls are your thing, try Swedish Cardamom Buns for a slightly more restrained, cardamom-forward version – or Honey Bun Cake if you want the same flavour in a format that does not require shaping.

Ingredients for Cinnabon Cinnamon Rolls

  • Dough:
  • 240ml (1 cup) whole milk, warmed to 40C (105F)
  • 7g (2 1/4 teaspoons) instant yeast
  • 100g (1/2 cup) granulated sugar, divided
  • 560g (4 1/2 cups) all-purpose flour, plus more for dusting
  • 1 teaspoon fine salt
  • 2 large eggs, at room temperature
  • 85g (6 tablespoons) unsalted butter, softened
  • Cinnamon filling:
  • 115g (8 tablespoons) unsalted butter, very soft
  • 200g (1 cup packed) dark brown sugar
  • 3 tablespoons ground cinnamon
  • 1/4 teaspoon fine salt
  • Cream cheese frosting:
  • 225g (8 oz) full-fat cream cheese, at room temperature
  • 115g (8 tablespoons) unsalted butter, at room temperature
  • 240g (2 cups) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 to 3 tablespoons whole milk

How to Make Cinnabon Cinnamon Rolls

  1. 1

Warm the milk to 40C (105F) and pour into a large bowl or the bowl of a stand mixer. Sprinkle the yeast over the top and add 1 tablespoon of the granulated sugar. Stir gently and leave for 5 minutes until foamy.

  2. 2

Add the remaining sugar, eggs, and softened butter to the yeast mixture and mix briefly to combine.

  3. 3

Add the flour and salt and mix until a shaggy dough forms. Knead with a dough hook on medium speed for 7 to 8 minutes, or by hand on a lightly floured surface for 10 to 12 minutes, until the dough is smooth, soft, and slightly tacky but not sticky.

  4. 4

Place the dough in a lightly oiled bowl, cover, and leave to rise at room temperature for 1 to 1.5 hours until doubled in size.

  5. 5

Make the filling by beating together the very soft butter, dark brown sugar, cinnamon, and salt until smooth and spreadable. Set aside at room temperature.

  6. 6

Once the dough has doubled, turn it out onto a lightly floured surface and roll into a rectangle of approximately 45 x 35 cm with the longer edge facing you.

  7. 7

Spread the cinnamon filling evenly over the entire surface, reaching all the way to the edges.

  8. 8

Starting from the long edge closest to you, roll the dough up tightly into a log. Pinch the seam firmly to seal.

  9. 9

Cut the log into 12 equal rolls using a sharp serrated knife or unflavoured dental floss. Arrange cut side up in a greased 23 x 33 cm (9 x 13 inch) baking dish with a little space between each roll.

  10. 10

Cover loosely and leave to rise for 45 to 60 minutes until the rolls are puffy and touching each other.

  11. 11

Preheat the oven to 180C (350F). Bake for 22 to 25 minutes until golden on top and cooked through. The rolls should still feel very soft - do not overbake.

  12. 12

While the rolls bake, make the frosting. Beat the cream cheese and butter together until completely smooth. Add the powdered sugar and vanilla and beat until fluffy. Add milk one tablespoon at a time until you reach a thick but spreadable consistency.

  13. 13

Spread the frosting generously over the rolls the moment they come out of the oven. Let it melt slightly into the warm layers. Serve immediately.

Tips & FAQ

Why are my cinnamon rolls tough instead of pillowy?
Usually from over-kneading or adding too much flour. The dough should be slightly sticky and soft - resist adding flour to make it easier to handle. Tough rolls also come from overbaking, so pull them out when the centre looks just set.
Can I make these the night before?
Yes - assemble the rolls and place them in the tin, cover and refrigerate overnight before the second rise. The next morning, let them come to room temperature for 30-45 minutes, then bake as normal.
What is the secret to getting close to Cinnabon flavour?
The combination of a stronger, more pungent cinnamon variety (like Makara or Ceylon) and a cream cheese icing is what makes Cinnabon rolls distinctive. Using high-quality cinnamon makes a noticeable difference.
How do I get perfectly even rolls?
Use unflavoured dental floss instead of a knife - slide it under the roll, cross the ends over the top, and pull. It cuts cleanly without compressing the dough. A very sharp, thin knife also works.
My rolls are not rising - what went wrong?
Either the yeast is dead (check the date and test it in warm water with a pinch of sugar before using), the liquid was too hot and killed the yeast (should be about 38C), or the kitchen is too cold for the dough to rise.
